Vanilla Mint Fruit Salad

Already on a cooking kick and resigned to a grueling night of homework (though clearly, there is some distraction going on…), we thought a dessert was in order. Nothing fattening, just something light and refreshing.

What we ended up creating was an unbelievably yummy mojit0-daquirish fruit salad. Though the recipe instructed to let it sit for an hour, we kept sneaking to the kitchen to taste pieces. Everyone, including my pickiest-eater roommate, wanted seconds. We almost felt guilty that it tasted so good, because it required pretty much no work at all. On the other hand, what we missed in chopping and baking will surely be made up in essays and problem sets. Lord.

Ingredients:
2 cups grapes
24 oz. or so strawberries, hulled and halved
1/4 cup sugar
2 tsp mint, finely chopped
1/4 tsp vanilla extract
whipped cream (optional)

Instructions:
Combine all of the ingredients in a large bowl and toss. Refridgerate 1-4 hours and serve. Garnish, if you desire, with whipped cream and a mint sprig.

    This would be great with a splash of Grand Marnier, triple sec, or brandy. Just a thought.
